Our Manzanita Adventure

Last weekend, we drove to the coast to photograph the wedding of our dear friends. We decided to stay an extra day to give ourselves a mini vacation … In fact, it was our very first visit to the coast by ourselves!

We thought it would be awesome to borrow some bikes from our hotel to take to breakfast, then to the beach. Besides the fact they were super rusty, and falling apart, it was awesome!

After our morning bike excursion, we hopped in the Jeep & headed out to Wheeler, OR for lunch. Our view wasn’t bad.

After lunch & some wine tasting, we headed back to Manzanita to shower & get ready for dinner. Before dinner, we went to the beach to watch the sunset … It was glorious!

ImageImageAfter  the sunset, we found out that the town shuts down at 8:00 … even on Saturdays. So, we ordered a pizza to-go, went back to our room & enjoyed a bottle of wine while watching CABLE!! Can you even imagine how excited we were about that one?? It was such a lovely weekend … so happy to share these moments!

Our Night at The Farm on Fern Hill

Last weekend, we headed out to Forest Grove, Oregon for a huge shindig, hosted by our friends Dave & Whitney (and their family). It was a “GO BEAVERS!!” party … an annual celebration for friends to come together, eat amazing food, hang out, and shoot trap.

I was a little weary of the whole gun situation (never shot a gun before … let alone been around that many guns at one time). BUT, once I saw the care these men were putting into teaching us about the guns, and shooting, I couldn’t have been more comfortable. One man mentioned that it’s awesome he can help bring people together to realize there’s so much more to shooting than hurting people or killing animals. It was just pure fun!! It was challenging to shoot the clay traps (of course, Jimmy shot a ton), but I ended up getting one!! It was so exciting!

We had so much fun. Dave & Whit are good people … and they have awesome friends & family! It was a perfect summer night.

One year ago, we started sharing our adventure here on this blog … It all started with this quote:

If we only knew …

Over the past year, there’s one image that really changed everything:

The last 365 days have been quite the adventure. As we’re getting closer to the day we moved to Oregon, things are feeling like they’re settling. We’re finding our place here …

Moving away from our previous home was hard … really hard. But, the purpose of this blog was, and always will be, a way to share our new life, here, with our friends & family back home. The unexpected readership came from fellow Portland & Oregon friends … people who love adventuring as much as we do! It’s been really great!

Even if a single person never read this blog, we’ve always thought of it as a gift to ourselves … It’s a way to document our life. I’ve absolutely loved going back through older posts (even from just 1 year ago), and remembering how we felt in that moment. It’s pretty moving.

As we move into the 2nd year of this blog, things will look much like they did last year. We’re planning on sharing more recipes, adventures, our journey of living a healthy lifestyle, the ups & downs of life, and our photography. Then, I get the big ear-to-ear smile when I think about all of the new things we’ll more-than-likely be sharing soon …

We believe life should be an adventure. Whether it’s what we expected, or full of surprises, we are making a point to enjoy every day.

Bits & Pieces

Once again, time is FLYING by … I wanted to take note of just a few bits & pieces of our life lately.

We just ordered a BUNCH of film. We were almost through our last stash (we have so much film to share here, but Mr. Jimbo is in charge of that … and well, I’m a way better blogger). So excited to see what comes of this new stash.

We’re really getting a handle of day-drinking on the weekends! Only joking … but seriously, I’ve been loving our little day dates lately.

I’m trying to be adventurous with my nail polish these days … when I bought this color, I was wearing gray & black … Proof that I need more color in my life!

After eating out of the house for nearly every meal the last two weeks, I broke the streak by making some freezer burritos. So excited to be cooking at home again.

Annndddd … since we’re eating at home more, we’re looking for ways to stop wasting so much food! J had the idea to chop up a bunch of cilantro to freeze in cubes. He put the chopped cilantro in a little baggie with a little water & canola oil, cut a hole in the bottom of the bag, and piped it into ice cube trays. Such a great idea!!

I am so in love with my husband … like, head-over-heels-makes-my-face-hurt-from-smiling love! This summer has been our first away from home, ever. It’s been such a growing experience (personally, and for our relationship). Can’t imagine being on this adventure with anyone else.

Vegetarian Breakfast Freezer Burritos

Want to know something kind of ridiculous … We haven’t eaten at home since August 2nd. Yes … like TWO WEEKS! First, we went camping, then we were super busy, then it got too late in the evening to shop, then it was the next weekend … Yesterday, we finally went to the store. Surprisingly, we only spent $68.00!!

On a related note, we’ve been having an issue lately with throwing away too much food. It’s a problem. WAY TOO MUCH! Plus, Jimmy totally gags when he’s emptying out the fridge. Keep in mind, he’s wearing a bandana over his nose, and the Tupperware isn’t even open yet. Makes me laugh every time … this all leads me to what we’re hoping is a solution: our new dry-erase board. Here, we’re writing what’s in the fridge (the drawers aren’t clear, so we forget about the food), and in the veggie basket. I am sure some of these ‘veggies’ are actually ‘fruits’ … don’t correct me! :)

I used some of these yummy ingredients this morning when I made a little stock of freezer burritos.

It was easy-breezy … plus I got to use our cast-iron skillet for the first time.

Ingredients 

  • 2 medium yukon gold potatoes
  • 1 red bell pepper
  • 1/4 large red onion
  • 1 medium zucchini
  • 6 eggs (I should have used 8)
  • 2 cloves fresh garlic, or a spoon of the prepped
  • 1 cup (or less) shredded cheese
  • 6 burrito size tortillas
  • 2 tbsp canola oil
  • salt & pepper
  • your favorite hot sauce
  • a handful bunch of cilantro
  • your favorite salsa

Directions

  1. Cook your potatoes & zucchini in pan. Once softening, add the bell pepper & onion. Cook until ingredients are soft and starting to develop some color. Add the garlic, cook for a few minutes.
  2. Add the hot sauce (as much as you’d like) to the veggies, then season with a little salt & pepper.
  3. Remove the veggies from the pan, then cook the eggs (scrambled style). It’s best if you cook the eggs until they’re JUST cooked … when they’re still really moist. It’ll make your burritos extra tasty!
  4. Assemble your burritos by layering the eggs, veggies, hot sauce, cilantro, salsa, and cheese. Wrap the tortillas, then wrap with foil.
  5. I ate one right after, but you can put the others into the freezer to eat later.
  6. To reheat, remove from the foil, then put in the microwave for 2 1/2 – 3 minutes, then let cool.
  7. Enjoy!

Baby Fever

There. I said it! I have baby fever!! … I know I’ve hinted at it before, but now, it’s really in full force.

Before, we were just getting settled into our new life in Portland. Now, we’re settled. Before, I didn’t have health coverage that would cover pregnancy. Now, I do. Before, Jimmy and I were unsure of our financial situation in this new place. Now, we’re saving & have our budget all figured out. Before, we had some rough days where we weren’t communicating effectively. Now, we’ve really worked on respecting our relationship & marriage, and we’re really really happy.

So, now, it’s a matter of time.

Today I was thinking about something really interesting: I’m not in love with other people’s babies. I don’t swoon every time I see a newborn … I don’t go crazy when I see baby things. While I do think baby clothes are cute, and of course, I think newborns are adorable, I get way more excited when I think about our babies.

What will they look like? Will they look more like me or J? I imagine J as a dad … an amazing dad. I can’t even say it or think about that enough … Him reading bedtime stories to our kids, or teaching them all of the things that dads teach their kids. I can’t wait for the nights when we put our kids to bed then have a lovely date night in the comfort of our own home. I can’t wait for family camping trips, and for these future kids to play with our dogs. I’m not even sure I am fully ready to raise a child (is anyone ever really ready??), but I am so excited to be pregnant & birth a baby. I’m excited to foster a life … I’m excited to teach a child, and help them grow into a good person.

We are only getting older … we could wait forever, then our chance will be gone. We’re comfortable in our life right now. It’s the first time in a long time we’ve been really comfortable … comfortable with money, with our time, with the adventures we’re going on, with friends, and with each other. So, it’s one of those things … do we give up a little bit of comfort to leap into the next chapter? We’ve only been married for 4 years, but we’ve been together for almost 7. I’ve wanted to have J’s babies for most of that time!! I can’t help it … he’s a good looking man.

What Our Weekend Looked Like

This weekend, we headed out to the Prineville Reservoir with our dear friends Matt & Ali. We spent our days on the water, nights on the beach, and slept under the stars … It was hot, but it was amazing. We have a ton more to share, but for now … here’s a peek at our weekend.
